Homemade banana pudding is delicious and very inexpensive to make. It is also easy and fast!
Make a simple custard…..add bananas and vanilla wafers. It’s just that simple.
3/4 c. sugar
1/3 c. all-purpose flour or 3 tbs. cornstarch
1/4 tsp. salt
2 c. milk
3 slightly beaten egg yolks (Save whites for meringue topping. Otherwise use 3 whole eggs)
2 tbs. butter
1 tsp. vanilla
1 box vanilla wafers
In saucepan, combine sugar, flour, and salt. Stir in milk gradually. Cook and stir over medium heat until bubbly. Cook and stir 2 more minutes. Remove from heat.
Stir small amount hot mixture into egg yolks. Immediately return to saucepan. Cook 2 more minutes, stirring constantly. Remove from heat. Add butter and vanilla.
Pour 1/3 mixture into bowl or casserole dish. Slice half of bananas and place on top of the mixture. Next place a layer of vanilla wafers. Pour next 1/3 mixture and repeat banana slices and wafers. Top with last 1/3 mixture.
This will be delicious just as is (possibly top with vanilla wafer crumbs).
OR top with
3 egg whites
1/2 tsp. vanilla
1/4 tsp. cream of tartar
6 tbs. sugar
Beat egg whites with vanilla and cream of tartar until soft peaks form. Gradually add sugar, beating until stiff and glossy peaks form and all sugar is dissolved. Spread meringue over banana pudding. Bake in 350 degree oven for 12 to 15 minutes or until meringue is golden. Cool before eating.
This banana pudding is very rich and absolutely delicious!
