Hummingbird Cake

Hummingbird Cake is a recipe in every Southern woman’s recipe box.

This cake is very rich and delicious!



3 c. all purpose flour

2 c. sugar

1 tsp. salt

1 tsp. soda

1 tsp. cinnamon

1 1/2 tsp. vanilla

1 1/2 c. oil or butter

3 eggs, beaten

8 oz. crushed pineapple

2 diced bananas

1 c. chopped pecans (walnuts can be substituted if necessary)

Do not use mixer!

Sift together flour, sugar, soda, salt and cinnamon in a large bowl.  In another bowl, mix bananas, eggs, pineapple, oil, vanilla and nuts.  Combine contents of both bowls, stirring well, but not beating.

Pour into 3 greased and floured 9=inch round pans for 30 minutes at 350 degrees. Cool on rack and ice.


8 oz. cream cheese

1/2 stick butter

1 lb. box confectioners sugar


Have all ingredients at room temperature.  Cream butter and cream cheese.  Add sugar, small amounts at a time, blending well.  Thin to desired spreading consistency with milk.  Spread on cake (use as filling between layers and as icing).  Place some nuts on top of cake (just to make it look pretty)!
