Sweet potatoes are very popular in the South. They are also very nutritious.
This dish is decadent……but you ARE getting your veggies!
4 c. sweet potatoes
1/4 c. sugar
1/2 c. butter (melted)
1 tsp. vanilla
1/4 c. flour
Mix these ingredients well with a spoon. (so far this has been exhausting, hasn’t it?).
1 c. brown sugar
1/2 c. flour
6 Tbs. butter
1 1/2 c. chopped pecan (or walnuts)
Mix together brown sugar and flour. Cut up little pieces of butter and add to brown sugar and flour. Mix together again. Stir in nuts.
Spread topping over sweet potato mixture.
Bake at 350 degrees for 30 minutes
(wipe your brow from all of the hard work…….hey you’ve been baking after all)
