Chicken Cacciatore

Chicken Cacciatore is a classic dish made with chicken and a delicious tomato sauce. It is great served over noodles or rice and serves 4.

This recipe is very easy and great for people who don’t think they can cook.

1/4 c. flour

1 tsp. salt

3 lb. chicken (cut up)

1/4 c. olive oil

2 medium onions (quartered)

1  15 oz. can tomato sauce

1/2 c. water

1 clove garlic (minced)

1 tsp. salt

1 tsp. oregano

1/4 tsp. black pepper

1/4 tsp. thyme

1  4 oz. can mushroom stems and pieces


Mix flour and salt.  Coat chicken pieces with mixture.  Brown chicken in olive oil.  Drain well on paper towels. Remove chicken from skillet.

Drain excess fat from skillet.  Return chicken to skillet and add onion.  Mix tomato sauce, water, seasonings, and mushrooms (with liquid).  Pour tomato sauce mixture over chicken.

Cover and simmer 45 minutes or until chicken is tender.  Serve over noodles or rice. This dish Serves 4.
