Waikiki Meatballs are a welcome change to the ordinary meatball. They have that little “Taste of the Orient” going on!
Soy sauce, ginger and pineapple make all of the difference…..from boring to exciting!
This dish is very easy to prepare AND affordable.
1 1/2 lb. ground beef
2/3 c. cracker crumbs
1/3 c. minced onion
1 1/2 tsp. salt
1/2 tsp. ginger
1/2 c. milk
1 Tbs. cornstarch
1 13 oz. can pineapple tidbits, drained (reserve syrup)
1/2 c. brown sugar (packed)
1/3 c. vinegar
1 Tbs. soy sauce
1/3 c. chopped Bell pepper
Mix together beef, cracker crumbs, onion, egg, salt, ginger and milk. Shape mixture by rounded tablespoonfuls into balls. P our enough vegetable oil to cover bottom of skillet. Saute the meatballs (they need to be cooked completely).
Remove meatballs from skillet and keep warm. Remove excess grease from skillet.
Combine cornstarch and sugar. Add reserved pineapple syrup, vinegar and soy sauce and stir until smooth. Pour into skillet and cook over medium heat. Stir constantly until mixture thickens and boils. Lower heat and stir 1 minute.
Add meatballs, pineapple and Bell pepper. Cook over low heat until everything is warm.
Waikiki Meatballs are wonderful over rice OR as an appetizer.
