Grits and Cheese Casserole

Southerners love their grits!  You will, too, after you try this Grits and Cheese Casserole.

Grits, butter, cheese, milk, bacon……………..yum!

This dish is delicious and very affordable.



4 c. water

1 c. grits

1/3 stick butter

2 eggs

8 oz. shredded cheese

1 tsp. salt

1/8 tsp. cayenne

dash of garlic salt


4 slices bacon (cut into small pieces and fried)

1 green onion (cut into small pieces)

Bring water to boil, add salt.  Add grits slowly, stirring constantly.  Cook about 20 minutes on low heat. Remove from heat.

Stir in butter and cheese (leave a little extra cheese for topping) until melted.  Break 2 eggs into bowl and beat well.  Add 1 cup of milk. Pour mixture into grits slowly, beating as you go with spoon.  Add dash of garlic salt and cayenne pepper.  Add 3/4 bacon and green onion.  Stir until everything is well blended.

Pour into a  9″ x 13″ greased casserole.  Sprinkle remaining cheese, bacon and green onion on top.  Bake covered with foil for 35 minutes at 350 degrees.  Take off foil and bake another 10 minutes or until golden brown.

Serves 12 people.
