This hot potato salad is made in the microwave!
It’s fast and easy and no one will believe how easy it is to prepare. Bacon and seasonings make this potato salad one you will be sure to love!
4 medium potatoes
4 slices bacon
6 chopped green onions
2 Tbs. sugar
1 Tbs. flour
1 cube beef bouillon
1 tsp. salt
1/4 tsp. ground allspice
dash of black pepper
1/2 c. vinegar
1/2 c. water
butter or vegetable oil (just to rub on potatoes)
Microwave on High for all steps.
Rub butter (or oil) on potatoes. Microwave for 15 minutes (or until a fork will go through). Set aside.
Place 1 layer of paper towel in bottom of glass bowl. Cut bacon into pieces and place in bowl. Cook until crisp (for 3-4 minutes). Remove paper towel and bacon, leaving drippings in bowl.
Add onion (leave a little for later to garnish) and cook 1 minute. Stir in sugar, flour, bouillon, salt, allspice and pepper. Blend in vinegar and water. Cook 3 minutes (uncovered) until mixture boils and thickens, stirring 2 times. Remove from microwave.
Peel potatoes and slice into hot mixture. Toss and top with crumbled bacon. and remaining green onion for garnish. Servers 4-6.
