Chow Chow is a favorite relish in Texas. It is used to “spice up” pinto beans and black-eyed peas. Lot’s of people like their chow chow with pork chops or ham. Hamburgers and hot dogs taste great with it also!
Tomatoes and cabbage make this relish a little unusual. It is a great way to use all of your garden tomatoes! The recipe below makes a lot and you will need to “can it” OR give it to family and friends (they would like that).
This relish is delicious and you will love making it and eating it!
1 gal. tomatoes
1 lg. head cabbage
1/2 c. salt
2 hot peppers
12 sweet peppers
2 Tbs. pickling spices
4 c. sugar
1 qt. vinegar
Chop tomatoes, cabbage, apples, onions and sweet peppers. Combine them in large bowl and cover with the salt. Let stand overnight. Drain.
Add diced hot peppers, vinegar, pickling spices and sugar.
Allow to boil slowly until tender (about 15 minutes).
Now…. you can either divide the chow chow into small containers and refrigerate. Then….after properly chilled it will be ready to keep several containers for your family and then give some away for gifts.
“Can” this delicious recipe to have on hand for a while! It makes about 12 pints.
