Mexican Cornbread is a Texas treat! We love our regular cornbread, but this is just a little spicier and yummier.
Jalapenos, onion, cheese and corn make this cornbread extra delicious! This is also a very hearty bread.
1/2 c. bacon fat (or vegetable oil)
1 c. cornmeal
1 tsp. salt
1/2 tsp. baking soda
2 eggs (slightly beaten)
1/2 lb. cheddar cheese
1 onion (chopped)
1 can cream style corn
1 c. milk
1 can Jalapeno peppers
Preheat oven to 375 degrees. Warm grease in a large iron skillet (can use a regular baking pan if you prefer).
Mix all ingredient thoroughly. Pour into skillet and bake 45 to 50 minutes.
Serves 8 generously.
