Cornbread Salad

Cornbread Salad is very popular in the South.  It is nearly a meal all by itself!

The main ingredients are cornbread, kidney beans, corn, tomatoes and small chunks of meat.

This salad is an easy delicious dish!




1 pkg. cornbread mix, cooked

1/2 c. chopped celery

3/4 c. chopped onion

3/4 c. chopped Bell pepper

1 pint of cherry tomatoes (cut in half)

1 can of kidney beans

1 to 1 1/2 c. cooked frozen corn

chunks of chicken or ham (OR several slices of cooked crumbled bacon)

8 oz. cheddar cheese

Ranch Dressing (experiment on flavor of dressing if you want)

Cut cornbread into small cubes.  Put half of the cornbread into dish.  Add half of the kidney beans, corn and your choice of meat.

Take out some of the chopped onions and Bell pepper to save for garnish.  Add half of remaining onions, Bell pepper, and celery to dish.

Add half of the cherry tomatoes.  Cover with Ranch Dressing (or dressing of your choice).  Sprinkle half of the cheese over top.

Repeat process.  Garnish with extra onions and Bell Pepper.  Serves 6.
