Chocolate Meringue Pie

Here’s a pie for all of you chocolate lovers out there.  Chocolate Meringue Pie!

This pie is a classic…..because everyone adores it.  It always makes any meal a little bit more special!

Ingredients for chocolate filling:

1  c. sugar

1/3 c. flour

1/4 tsp. salt

2 c. milk

2  1-oz. squares unsweetened chocolate (chopped into pieces)

3 slightly beaten egg yolks (separate and save whites for meringue)

2 Tbs. butter

1 tsp. vanilla

1  9-inch baked pie shell

 

Bake pie shell.  (The pie shells from the store are marvelous, but I will include a recipe below)

Separate egg yolks from egg whites (whites are used for meringue).

Mix together sugar, flour and salt in saucepan.   Add milk gradually, cooking over medium heat.  Add chocolate to mixture.  Continue cooking until it starts bubbling (stirring frequently).

Take saucepan off of stove.  Incorporate a large spoonful of mixture into egg yolks and return back to mixture.  Cook 2 more minutes, stirring constantly.

Remove from heat.  Add butter and vanilla.  Pour into baked pie shell.  Top with meringue.

 

Meringue:

3 egg whites

1/2 tsp. vanilla

1/4 tsp. cream of tartar

6 tbs. sugar

Beat egg whites with vanilla and cream of tartar until soft peaks form.  Gradually add sugar, beating until stiff and glossy peaks form and all sugar is dissolved.  Spread meringue over pie.  Bake in 350 degree oven for about 15 minutes or until meringue is golden.  Cool before eating.

Pie Crust

Ingredients:

1 1/2 c. flour

1/2 tsp. salt

2/3 c. shortening

3 Tbs. water

Mix flour and salt together.  Add shortening and cut into flour with fork or pastry blender.  Add water and mix gently with fork until well blended.

Form pastry into a ball and place into pie plate.  With tips of fingers spread pastry along bottom and sides of pie plate, leaving extra to flute on edge.  (that’s right you don’t have to roll out this pie crust).
