Chicken Tetrazzini

Chicken Tetrazzini is a classic dish that good cooks have been serving their family and guests for years.  Guess why!

This dish is delicious, very affordable and easy to prepare.  It is a classic that people love!

You can also use turkey (use up leftovers from a holiday).  This recipe serves 8 – 10 people and freezes well.


5 lbs. chicken

2 medium onions (diced)

2 stalks celery (diced)

24 Ritz cheese crackers (crushed)

1 lb. cheddar cheese (shredded)

8 oz. spaghetti

1 1/2 sticks butter

1 c. flour

1 qt. milk

1 can cream of mushroom soup

Boil chicken with onions and celery (or use roasted chickens from the store).  Bone and cut in pieces.  Save onion and celery.

Boil the spaghetti and drain. Put in large mixing bowl.

Combine butter and flour in large sauce pan and cook over medium heat until butter is melted into flour, stirring occasionally.  Add milk to mixture and cook until it begins to thicken.  Stir often.  Add cheese to mixture and continue until cheese is melted and thoroughly incorporated.

Add chicken pieces with the onions and celery to spaghetti.  Pour sauce over mixture.  Mix thoroughly.  Pour into 9 x 13 baking dish.

Sprinkle crushed Ritz crackers over top of dish.  Bake at 350 degrees for 30 to 40 minutes.
