Oatmeal Cookies

1 c. shortening

1 c. brown sugar

1 c. sugar

2 eggs

1 tsp. vanilla extract

1 c. flour

1 tsp. salt

1 tsp. baking soda

3 c. oats

1 c. raisins (or nuts)

Cream shortening.  Cream in brown sugar and sugar a little at a time.  Beat in eggs, one at a time.  Add vanilla.

Sift flour, salt and baking soda together and mix into batter, a third at a time.  Stir in oats and raisins (or nuts).

Drop by teaspoonfuls on greased cookie sheets.  Bake at 350 degrees for 12 – 15 minutes.

Cool completely.  Freezes nicely.  Makes 6 – 7 dozen.
