Weiner Schnitzel is a favorite German dish! This dish is made from pork chops that are flattened and tenderized.
It is traditionally eaten with lemon juice squeezed on top while schnitzel is still hot. You will love this dish!
6 pork chops (get boneless center cut)
1 c. flour
1 1/2 plain bread crumbs
2 eggs (beaten)
2 lemons (cut in wedges)
Pound meat flat to approximately 1/8 inch thickness. Dip both sides of pork chops in flour. Dip both sides of chops in eggs. Then dip both sides of chop in bread crumbs. Season with salt and pepper (be fairly generous).
Heat shortening in frying pan approximately 1/4 inch deep. Fry chops on both sides until golden brown. Do not overcook. Serve hot with a wedge of lemon.
Typically this dish is eaten with either noodles or German Potato Salad. Sweet and Sour Cabbage is another traditional side!
